Chicken tortillas

Today is a very busy day, i am going to Greece tomorrow so i have plenty of things to do...so between the packing and fixing the house and making some phone calls and arrange some things i realised that we need to eat also!!!!

What shall i cook that is fast, delicious and good for the health??? Tortillas! I didn't had the time to make my own so i bought them ready from the supermarket but it works just fine! And from tomorrow since i will be in Greece i will share with you more Greek recipes made in my Greek kitchen!

You will need:
 For 4 portions

4 big tortillas
4 small chicken breast fillet
250 gr cottage cheese
1 green pepper
1 orange or yellow pepper
1 red pepper
2 big tomatoes
1 big clove garlic
Mustard, salt, pepper, oregano, thyme, paprika, cummin, curry, cayenne pepper
Olive oil
100 gr grated yellow cheese (any kind you like)

Cut the peppers and the garlic in small pieces, add some olive oil in a pan (i use a wok) and when the oil is hot throw them in, stir well and after a couple of minutes add the chicken after you have cut in in small thin pieces.




Add the mustard and all the spices. Stir from time to time and be careful so it doesn't get burned. The temperature must be high.



When the chicken is ready remove it from the pan and share it in the tortillas. Add the cottage cheese, some tomato and if you like add some boiled corn and peas for more flavour and color! Roll the tortillas as you see at the picture down below and add some grated cheese on the top. If you have a problem to keep the tortillas closed use a wooden toothpick to close it and don't forget to remove it before you start eating!



Preheat the oven at 200 degrees for about 10 minutes and put the oven pan with the tortillas in it for about 5 minutes. When the cheese has melted, that means they are ready. You can serve them with salad or boiled vegetables.
