I am trying not to eat so much red meat even though i come from a country that i think that we eat too much red meat there, almost everyday, so today i made my own recipe for potatoes gratin, which is potatoes in the oven with creme fraiche, Greek goat cheese, garlic, peppers and some herbs. You can serve this with salad or boiled vegetables and if you are a meat lover then you can serve this also with meat!
You will need:
(for 4 portions)
10 small potatoes
3 dl creme fraiche
2,5 dl water
150 gr goat cheese
1 small yellow pepper
1 small red pepper
1 clove garlic
Salt, pepper, oregano
Olive oil
Remove the skin from the potatoes, wash them and cut them in round thin pieces like you see in the picture, put them in an oven pan and add some salt and pepper.
Cut the peppers and the garlic in small pieces, put some olive oil in a sauce pan and when its hot throw them in.
When they take some color add the creme fraiche, the water and the goat cheese and stir well until the cheese has melted. Add some salt, pepper and oregano, turn the heat down in half and let it boil for 5 minutes without a lid.
Add the sauce in the potatoes and make sure that they are covered with it. (if necessary add some more water in the sauce)
Put them in a preheated oven at 200 degrees in the middle of the oven and let them cook for at least 1, 5 hour but you can check them from time to time.

Greek Souvlaki with chicken gyros
I am a big fan of the Greek souvlaki and when i am in Greece i eat it very often. Now that i am living in Sweden i make my own, so when ever i feel homesick i make souvlaki with Greek pita sended to me from my mother by post!!! My dear mother knows how much i like it so she sends the pitas to me from time to time so i have the real Greek pita in my freezer all year around.
You will need:
(for 4 souvlaki)
2 chicken breast fillets
4 pitas
2 tomatoes
1 green pepper
1 yellow pepper
1 big onion
2 tablespoon olive oil
Oregano, thyme, paprika, pepper, salt, cummin, curry, mustard, cayenne pepper
For the yogurt sauce:
2 garlic cloves
2 dl yogurt
1 tablespoon olive oil
Dill, salt, pepper
Put the olive oil into a frying pan or a wok, i prefer the wok when i have many ingredients. Chop the onion and the peppers in small pieces and when the oil is hot throw them in and stir.
Cut the meat in thin long pieces as you see in the picture and add them into the pan.
Add all the spices and stir well until all the ingredients are cooked. While the meat is cooking you can make the yogurt sauce. Take a small bowl and put the yogurt inside, the salt, the pepper, the olive oil, some dill and the garlic in very small pieces and stir well. Your sauce is ready!
10 min before the meat is done, preheat the oven at 200 degrees and put the pitas inside and cook them at 180 degrees with the hot air. It takes only 5 minutes for them to be ready. When the pitas are cooked its time to serve your souvlaki. I will present 2 ways to you and you choose the one you like best!!!!

Clams in a pot!
Monday night i met my good friend Kerstin and since we were both in the mood to eat clams i booked us a table in a restaurant called Akkurat in Hornsgatan 18. I like Akkurat, i have been there before some times and i was always pleased with the food and the atmosphere. In their catalog you will find around 400 brands of whiskey and 200 brands of beer...That's a lot and that's good! They serve meat and fish but their clams are fantastic, so i strongly recommend them to you!
They serve clams in 8 different recipes so i am sure you will find something that you like. I like wine and garlic so i took the Moules Mariniere which are clams cooked in white whine, with onion, garlic, thyme, parsley and cream.
As you can see the food is coming in the pot and you eat it from there and if you want, you can ask also for some fried potatoes.
My friend Kerstin wanted to try something else, so she ordered the Moules Cidrae, which are clams cooked in apple cider with fennel, onion, mushroom, apple and cream.
After those delicious clams i thought i could have a dessert so i ordered the brownie with 3 kinds of chocolate. I could not eat it all, Kerstin ate some and still we left some in the plate...i can not say it was a big piece but it was very sweet so it was hard to eat it all.
After the dessert, came some port wine for me and some tea for Kerstin and after a lot of talking and laughing we realized that we were one of the few tables left...time to go home!!!! We had a lovely time in Akkurat and i am sure we ll go back soon!

Pasta with mushroom and ham white sauce
I love pasta (who doesn't) especially with white sauce and its perfect for the busy days when there is not so much free time to cook and you want something fast and easy. Today was one of these days so i have decided to cook pasta.
Usually i don't make any plans when it comes to pasta, i just open the fridge and i get what ever ingredients i have in it and i cook. So today when i checked i saw that i have some ham and mushrooms (i always have some creme fraiche in the fridge just in case) so these are enough to create a tasteful dish.
You will need:
for 4 portions
Pasta (i use brown pasta)
2 dl creme fraiche
2,5 dl water
3 big mushrooms
1 big onion
7 slices of ham (of course you can use more if you want)
Salt, pepper
Parmesan
Olive oil
Chop the onion and the mushrooms in small pieces, add some olive oil in a sauce pan and when its hot throw in the mushrooms and the onion and stir well, when they get some color add the ham after you have cut it in small pieces. Stir well and when the ham also has some light brown color add the creme fraiche and the water and stir, add some salt and pepper and low the heat in half and let it boil for about 10 min without a lid.
Boil your pasta in a pot with salted water and when its ready put it in a plate add the sauce and some Parmesan cheese.

Lamb chops with potatoes in the oven
For a long time now i wanted to cook lamb chops in the oven and since we went yesterday to the Swedish food market when i saw them i bought them immediately and i cooked them, so here is the recipe.
You will need :
(for 2 persons)
10-12 pieces of lamb chops (you can buy more if you are more people)
8-10 Small potatoes
Olive oil
Salt, pepper, oregano, thyme, coriander, rosemary, chilly
4-5 cloves of garlic
1 tablespoon mustard
Wash the meat very well and put it in a big bowl, add the spices, the mustard, the garlic (cut it in small pieces) and some olive oil, cover the bowl with aluminum foil and put it in the fridge for some hours or even better for the hole night and cook it the next day. The meat will be softer and more tasteful.
When you want to cook them, put them in an oven pan and use the olive oil from the bowl, add some water in it and this will be your sauce.
Preheat the oven at 200 degrees for about 15-20 minutes and then put the meat inside. After 15 minutes you will see that the meat looks more white, turn all the pieces so the other side will get white also and then cover the oven pan with aluminum foil and low the heat at 180 degrees and let it cook for about 3 hours. You can check the meat every 1 hour and turn the pieces over, from time to time. When the meat is ready remove the aluminum foil, put the heat back at the 200 degrees and let it cook for about 10 minutes (you will see that it is getting a nice color and then turn all the pieces so the other side will get the same color.
Because i cook the lamb for so many hours i add the potatoes later, (the potatoes don't need 3 hours to be cooked) about 40 min before the meat is ready. You can cook the potatoes in the same oven pan or in a separate. Remove their skin, wash them well, cut them in small square pieces (or how ever you want them) add some olive oil, salt, pepper, oregano, some water and put them in the oven.
When the meat and the potatoes are ready serve them with salad or boiled vegetables and...bon appetit!!!!

A walk at the swedish food market and a picnic lunch
Today we had a walk at the Swedish food market since i wanted to buy some food for lunch and for tonights dinner and i always love to go there because i find so many nice and fresh ingredients for my recipes. Fruits, vegetables, fish, meat, cheese, everything you wish is here...
Of course we have visited the Greek corner in the Hötorgshallen, in Hötorget and i bought some taramosalata, dolmadakia, olive oil and olives.
I have decided to buy some lamb racks for the dinner and some chicken and cheese for the lunch and since everything looked so good and we were very hungry we decided to have a picnic in the living room, the 10 degrees outside doesn't make you to want to have the picnic at the park! So this is how it looked!

Veal stew with plums and carrots
The fall is here and the weather is getting colder...mmm that makes me wanna have some meat in the pot so today i am cooking veal stew with plums and carrots!
You will need:
(for 4 portions)
850 gr veal (cut in square cubes)
1 big onion
2 garlic cloves
3 carrots
100 gr plums
5 dl meat or veal broth
Salt, pepper
Olive oil
Chop the onion and the garlic in small pieces, chop the carrots in thin round cuts. Add some olive oil in a pot and when its very hot throw in the meat, the onion and the garlic.
Stir well and when the meat is not red anymore and has some color add the broth, the plums and some salt and pepper.
Stir for some minutes and when it boils turn the heat down to the medium and cook it for about 3 hours with the lid on. You can check the meat every one hour. About 15 min before its done add the carrots in the pot.
When the food is ready you can serve it with rice, potatoes or pasta if you like.

Salmon fillet with white sauce, mushrooms, fresh onion and garlic
The last week i have been working a lot and i didn't had the time to cook properly and update the blog, but today since i am not working i have decided to cook a favorite dish to us, salmon in the oven with creme fraiche.
You will need: (for 2 people)
2 salmon fillets
2 dl creme fraiche (i use the 15%)
3-4 big mushrooms
4 big fresh onions
1 big garlic clove
Salt, pepper, oregano
8-10 small potatoes (really small)
Some olive oil
Remove the skin from the potatoes, wash them good and boil them covered, in salted water until they are tender when poked with a fork.
While the potatoes are boiling prepare the sauce. Wash the mushrooms and the 2 of the 4 onions (the other 2 we will use them on the potatoes) and chop them in small pieces, chop also the garlic. Add some olive oil in a sauce pan and when its hot throw in the mushrooms first, stir well and when they get colour and they are soft add the onion and the garlic, stir all the time and when they get a light brown color add the creme fresh and some water so its not that thick (about half of a tea cup but if you think its too thick add some more water). When it starts boiling turn the heat down to the medium and let it cook for about 10 min without a lid, stir from time to time and add some salt and pepper.
When the sauce is ready wash your salmon fillets, add some salt and pepper on both sides, put it in an oven pan (a small one) and cover it with the sauce. Put it in a preheated oven and cook it for about 20-25 min at 220 degrees in the middle of the oven. Serve it with boiled potatoes and add to them salt, pepper, oregano, olive oil and fresh onion.
