Greek souvlaki by Savvas!

Since i left Greece and moved to Sweden there is one food that i miss a lot...Yes i miss the Greek authentic souvlaki! My favorite is the pork on skewers actually but lately i also like the kebab (made from minced meat).

Last time when i was in Greece it was in July when we had our vacation and we got married with my husband so its been 6 months since i ate my last souvlaki! Now i am back in Greece for some days to see my family, my friends and to eat souvlaki of course! I think i could eat it every day.... Tonight we have decided to order and eat it here at home. Souvlaki and cold beer...I love this combination!



 Of course the souvlaki came from Savvas, a brand that we love to eat from and we trust for many years now. They are in business since 1925 and they have a big variety and top quality!




We all chose pita kebab with potatoes, onion, tomato and tzatziki in it! I ate 2 but i wouldn't mind for one more! Delicious! If you are ever in Greece, don't forget to visit a Savvas souvlaki place and enjoy the best souvlaki in town!

Cod fillet in white wine sauce with mustard and lemon.

At least once a week i try for us to eat fish. i love cod so i have found a recipe with some of my favorite ingredients in...wine, mustard and lemon! We like this recipe so much so this has become our traditional way to cook the cod!  Its easy, fast and healthy.


For 2 persons you will need:

2 Cod fillet
1 teaspoon Dijon mustard
2 tablespoon Olive oil
1 dl white wine
1 teaspoon polenta (or cornflower)
The juice from 1 big lemon.
Salt, pepper
water


Warm the oil in a pan large enough to accommodate the fish fillets in a single layer. If you are more than 2 people just double the ingredients. Season the fillets with salt and pepper and place them in the pan. Add some water (it should cover half of the fish), low the heat and cover the pan with aluminum foil and let them cook for 15 minutes.

Transfer the fillets to a plate and add the mustard, the whine, the polenta and the lemon juice in the pan where there is still the oil with the water and stir well, boil for some minutes and your sauce is ready!
You can serve the fish with salad, boiled potatoes or with mush potatoes if you like.

Scones

Last night i couldn't sleep and i was in the mood to cook something so i thought to bake some scones! This is the second time i am making them and i really like them! I found the recipe on my baking powder box and i follow that. Scones are easy to make and it needs only 15-20 minutes to bake and they make a great breakfast.


For 23 pieces you will need:

4 dl milk
8 dl all- purpose flower
1 teaspoon salt
4 teaspoon baking powder
100 gr butter or margarine (i use margarine for baking)



Preheat the oven at 250.
Mix all the ingredients in a bowl and start working the dough with your hands or if you have a food processor use it, this is what i did. The dough must be soft but not sticky.


When its ready take an oven pan with some non stick baking paper on it and divide the dough in small pieces work them with you hands don't make them too flat and make them like you see in the picture. Make a cross on them with a knife and bake them in the oven, in the middle for about 20 minutes. You will see they will get a nice gold color.



Eat them while the are still warm, i usually eat them with marmalade.

Chicken baked in foil

Long time ago i cooked this food but i used pork and it was delicious, today i have decided to cook it again but this time with chicken since i didn't had any pork. It doesn't need that much preparation and you just put it in the oven and wait....easy to cook but it takes some time until its ready, precisely 1 hour and 20 minutes!

You will need for 4 people:

4 chicken filled with no skin.
3 gloves of garlic.
2 small peppers, i used 1 yellow 1 orange.
2 teaspoon dijon mustard.
65 gr of hard yellow cheese.
salt, pepper, oregano.
2 soup spoon olive oil.
Aluminum foil and baking paper.


Preheat the oven to 200 degrees. Cut some foil and put some baking paper on the top of it as you see it in the picture. Clean and cut the chicken in small pieces and place it in the center.


Add the peppers, the garlic, salt, pepper, oregano, the mustard, the olive oil and the cheese in small pieces and steer well.

Fold the paper first and then the foil and seal the packet.


Bake for 1 hour and then open the packet and let it cook for 20 more minutes. You can serve it with rice, potatoes and salad. I made baked potatoes in foil.
